This stunning Cab Franc opens with a beautiful nose filled with violet, muddled strawberries, black pepper, worn leather, and mint. It pops with flavors of black raspberry, cassis, orange peel, and a hint of rolling tobacco. The supple mid-palate is focused with precise acidity and rounded tannins that drive this powerful wine towards a surprisingly elegant finish.
Destemmed and cold-soaked for 7 days with daily pump-overs. 5-day fermentation with a mix of delestages, pump-overs, and punch-downs for cap management. 12-day total maceration.
Aged for 22 months in 225L barriques: 50% new French oak.
