Blackberry, violet, scorched earth, and dried herbs soar from the glass, while stylish flavors of currant, cocoa powder, chipotle and seared filet mignon dance on the palate. The 2019 Cabernet’s midpalate is juicy and silky as it is carried through to the finish by perfectly balanced acidity.

Destemmed and cold soaked for 6 days with daily pump-overs. 5-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 11-day total maceration.
