Brightly pitched aromas of quince, lemon peel, flint, bouillon and cardamom introduce this beautiful Sauvignon Blanc. The palate shows flavors of grapefruit, Asian pear, white pepper, fennel pollen, and just a hint of fresh mint. The elegant finish is driven by a vein of salinity and precise acidity.
Foot stomped and cold soaked for 4 hours before being pressed to barrel for native ferment. Malolactic fermentation complete.
Aged for 11 months in 50% new French Oak and 50% neutral.
