A brooding nose filled with blueberry, worn leather, crushed rocks, and humidor. The stylish mid-palate is filled with flavors of seared plum, mulberry, anise, and hoisin that evolve into a dense mid-palate and luxurious finish.
Destemmed and cold soaked for 4 days with daily pump-overs. 6-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 10-day total maceration.
Aged for 22 months in 225L barriques: 63% new French oak, and 37% used French oak barrels.
