Seductive aromas of Bing cherry, anise, rose petal, cassis, and wilted chervil explode from the glass on this single-block Cabernet Sauvignon. Flavors of blackberry, fig, acai, and botanicals intermingle on the perfectly balanced mid-palate. The finish is surprisingly approachable for a young Sixmilebridge wine, with polished tannins and classy acidity.

Fermentation
Destemmed and cold-soaked for 7 days with daily pump-overs. 7-day fermentation with a mix of delestages, pump-overs, and punch-downs for cap management. 14-day total maceration.
Cooperage / Elevage
Aged for 22 months in 225L barriques: 100% used French oak barrels.
