Destemmed and cold soaked for 6 days with daily pump-overs. 7-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 13-day total maceration.

Aged for 22 months in 225L barriques: 28% new French oak, 14% new Hungarian oak, and 58% used french oak barrels.
